Kelli’s Homemade Coconut Cake
I’ve had so many requests since posting my baked cake photos a few times on IG stories, so I figured, why not add it too my blogs instead of sending it out each time.
It’s so easy and uses basic simple ingredients that are filled with deliciousness!
INGREDIENTS
2 eggs
1 cup flour
1 cup desiccated coconut
125gms butter
1/2 cup milk or more if needed
1/2 cup sugar
METHOD
Preheat oven 180 degrees
Melt the butter in the microwave until just soft
Add the dry ingredients
Add 2 eggs
Add milk and use a little more if needed
You may hand mix or use an electric mixer, your choice
Next line your baking tin (I love it in a loaf pan) with baking paper, or it may stick
Bake on top shelf for 45 mins or until it springs back in the centre when you lightly touch it
Most importantly?..It tastes amazing hot. The outside is crunchy and the inside is soft and fluffy!
